اثر تیمار اسیدهای آلی بهتنهایی یا همراه با امواج فراصوت در افزایش عمر قفسه ای برش های تازه میوه کیوی
Effects of Organic Acids Treatments with or without Ultra-Sonic Treatment on Increasing the Shelf Life of Fresh Cut Kiwifruit

<p dir="rtl"><strong>عرضه میوه به</strong><strong><span dir="ltr"></span></strong><strong>صورت برش</strong><strong><span dir="ltr"></span></strong><strong>های تازه و آماده مصرف در سال</strong><strong></strong><strong>های اخیر افزایش زیادی یافته است. میوه کیوی نیز از جمله میوه­هایی است که عرضه آن بهصورت تازهبریده در سال­های اخیر روند افزایشی داشته است. آلودگی میکروبی، کاهش شدید سفتی و قهوهای شدن از عوامل اصلی محدود کننده عمر قفسه­ای قطعات تازهبریده میوه­ها می­باشند. در این پژوهش اثر تیمارهای اسید اگزالیک و اسید سیتریک هریک در غلظت­های صفر، دو، چهار و شش میلی­مولار بهتنهایی و یا در تلفیق با تیمار امواج فراصوت روی قطعات تازهبریده میوه کیوی مورد بررسی قرار گرفت. قطعات تازهبریده کیوی پس از اعمال تیمار، در دمای دو درجه سانتیگراد انبار و در زمانهای 7 و 14 روز از انبار سرد خارج و مورد بررسی قرار گرفتند. نتایج نشان داد که تیمارهای اسید اگزالیک و اسید سیتریک بهطور مؤثری در مقایسه با شاهد ظاهر محصول را حفظ نموده و دارای سفتی بافت، اسید قابل تیتر، اسید آسکوربیک، مقدار فنل کل و ظرفیت آنتی­اکسیدانی بالاتر و در عین حال کلونی باکتری کمتری بودند. در بین تیمارهای اعمال شده نیز تیمارهای اسید اگزالیک در غلظت­های دو، چهار و شش میلی­مولار و اسید سیتریک در غلظت شش میلی­مولار بهتر از سایر تیمارها عمل نمودند. اعمال تیمار فراصوت بهتنهایی با وجود کاهش بار میکروبی و حفظ بهتر ویژگیهای آنتی­اکسیدانی تأثیر چندانی در حفظ بازارپسندی قطعات تازهبریده میوه کیوی نشان نداد. بنابراین اعمال تیمارهای اسیدآلی بهصورت غوطه­وری میتواند در افزایش عمر قفسه­ای قطعات بریده شده میوه کیوی مورد استفاده قرار گیرد. </strong></p>
<p>The market sales of ready to use fresh cut fruits have grown rapidly in recent decades. Kiwi fruit is an important fruit that its marketing as fresh cut has increased in recent years. The main limiting factors in shelf life of fresh cut fruits are microbial spoilage, drastic softening and browning. In this study, the effects of oxalic and citric acids, both at 0, 2, 4 and 6 mM concentrations, with or without ultra-sonic treatment were investigated on the increasing the shelf life of fresh cut kiwi fruit. After treatments, the fresh slices were stored at 2°C for 7 or 14 days and assessed for several traits and analyzed. Results showed that, oxalic and citric acid treated slices, in comparison to the control, had greater marketability, as well as higher flesh firmness, titrable acidity, ascorbic acid content, total phenol content and antioxidant capacity and smaller bacterial forming colony unit (CFU). Among the treatments, 2, 4 and 6 mM oxalic acid and 6 mM citric acid treatments were found more appropriate than the reaming treatments. Application of ultra-sonic treatment, despite the reduction of microbial load and maintaining antioxidant capacity, had no effects on marketability of fresh cut kiwi fruit. Hence, application of organic acid treatments as dipping can be used to increase the shelf life of fresh cut kiwi fruit.</p>
