تأثیر اسیدآسکوربیک، کلرید کلسیم و پراکسید هیدروژن بر ماندگاری قارچ تکمه ای (Agaricus bisporus)
Effect of Ascorbic Acid, CaCl2, and Hydrogen Peroxide on Mushrooms (Agaricus bisporus) Shelf Life

<p dir="RTL"><strong>قارچ تکمه­ای دارای عمر انبارمانی کم بوده و قهوه­ای شدن، کاهش وزن و آلودگی میکروبی از تغییرات عمده­ای است که پس از برداشت قارچ تکمه­ای رخ می­دهد و باعث کاهش ارزش اقتصادی آن میشود­. بنابراین، در این پژوهش، اثر برخی از تیمارهای پس از برداشت از جمله کلرید کلسیم (3/0 و 45/0 درصد)، اسید آسکوربیک (1، 2 و 3 میلی­مولار)، و پراکسید هیدروژن یک درصد بر افزایش ماندگاری قارچ تکمه­ای بررسی شد. قارچ­ها بهمدت دو دقیقه در تیمارهای فوق غوطه­ور شده و پس از خشک شدن در دمای آزمایشگاه، در درون ظروف پلی­اتیلنی با استفاده از پوشش سلوفان بسته­بندی و به دمای چهار درجه سانتیگراد منتقل شدند. برخی صفات کیفی و کمی در زمان­های هشت و 16 روز انبارداری مورد ارزیابی قرار گرفتند. نتایج نشان داد غوطهور کردن در کلریدکلسیم 45/0 درصد، اسید آسکوربیک دو و سه میلی­مولار و پراکسید هیدروژن یک درصد بهطور قابل توجهی، کیفیت بازارپسندی قارچ خوراکی تکمه­ای را حفظ و از باز شدن کلاهک آن ممانعت نمودند. تیمار کلرید کلسیم با کنترل کاهش وزن، حفظ سفتی، کاهش نشت یونی و کاهش جمعیت باکتری تیماری مؤثر در حفظ کیفیت پس از برداشت قارچ خوراکی بود. اسید آسکوربیک نیز در ممانعت از کاهش وزن تیماری بسیار مؤثر بوده و در حفظ سفتی، کاهش نشت یونی و کاهش جمعیت باکتری مؤثر نشان داد، ولی تیمار پراکسید هیدروژن تنها با کاهش شدید جمعیت باکتری به حفظ کیفیت پس از برداشت قارچ تکمه­ای کمک کرد.</strong></p>
<p>Mushrooms are characterized by a very short shelf life and browning, weight-loss and microbial infections are known as the most deteriorating postharvest modifications in the mushrooms, leading to notable economic losses. In this study, the effects of some postharvest treatments including calcium chloride (0.30 and 0.45%), ascorbic acid (1, 2 and 3 mM) and hydrogen peroxide (1%) on increasing mushroom shelf life were evaluated. Mushrooms were dipped in the solution treatments for 2 min, then dried at room temperature and packed in polyethylene container by cellophane cover and were stored at 4°C. Some qualitative and quantitative parameters were measured on 8<sup>th</sup> and 16<sup>th</sup> days of storage. Results showed that, 0.45% CaCl<sub>2</sub>, as well as 2 and 3 mM ascorbic acid and 1% peroxide hydrogen effectively maintained mushrooms marketability and kept the cap closed. CaCl<sub>2</sub> treatment was effective in extending the postharvest life of mushrooms due to reducing weight loss, maintaining firmness, reducing electrolyte leakage and lowering bacterial populations. Ascorbic acid was an effective treatment in reducing the weight loss, electrolyte leakage, bacterial populations and, thereby, maintaining the firmness. Hydrogen peroxide treatment improved the postharvest quality of mushrooms only through reducing bacterial populations.</p>
